Making Matzah
I was watching a documentary the other day on the making of matzah.
Orthodox Jews make it and they call it Shmurah matzah.The process is done by hand. The
ingredients are flour and water only. It is eaten for eight days during Passover and during this
time, eating bread is forbidden as well as other leavened products. Not an easy time. Matzah is
hard on the stomach and it often causes constipation. Think of it as eating rock-hard pizza and
you will know what it's like to eat matzah.There is often relief when this holiday is finally over
eight long days later.
Tip: to make matzah more digestible, the secret is to chew it and chew it till
it all becomes a soft mush. Then swallow. At the same time, all this chewing helps bring out the
flavor in the matzah. Happy Passover.
